사에미도리 품종의 부드러운 첫 수확 잎만을 사용하여, 수확 전 20~40일 동안 그늘에서 재배하여 잎에 L-테아닌과 엽록소가 풍부해지도록 합니다. 가장 어리고 좋은 잎만을 골라 증기로 산화를 막은 후 건조시킵니다. 이렇게 만들어진 제품을 덴차(문자 그대로 '갈기 위한 차')라고 합니다.
이 소중한 덴차는 줄기와 잎맥을 제거하고 전통적인 도자기 맷돌로 곱게 갈아 가루로 만듭니다. 이 정성스러운 과정을 통해 깊고 진한 풍미의 차가 탄생합니다.
